I Fossati adheres to the Classyfarm system of the Italian Ministry of Health which consists of monitoring farms. These controls give the consumer a further guarantee on the company's bio-safety.

The Chianina is the undisputed leader of the Italian breeds thanks to its organoleptic qualities, healthiness, flavor and tenderness.

Total traceability - closed cycle

You can be sure that the meat comes from our herd of cattle born and raised in Certaldo.

Internal processing

The processing is carried out in the company butcher shop. The maturation takes place in our cold room and goes from 7 days for the front quarter to 30 days for the rear quarter. This time gives softness to the meat and enhances the flavours.

Grazing animals

Our animals graze every day on the company's lands and never suffer the stress of being transported from one place to another.

Chianina meat has surprising nutritional values.

Compared to a protein content greater than 20% we find a low amount of cholesterol (50 mg./100 g.) and a reduced caloric intake (106 Kcal./100 g.)

Chianina meat is therefore extremely lean meat and, moreover, much richer in iron (1.6m/100g) than white meat.

The Chianina is an ancient breed, bred in central Italy for more than 22 centuries.
Native breed

Our farm has around 70 heads of pure Chianina cattle.

Diet

The diet strictly follows the products permitted by the PGI regulations which prohibit, for example, the use of silage in the fattening phase. We feed our animals with organic fodder and cereals from our fields.

Patience

We patiently wait for the animals to grow into adults. We do not give our animals either anabolics or steroids.
